Shanti Som kitchen

This issue we return to the kitchens of Shanti Som as they launch a new season in the popular restaurant, reflecting the kind of fusion food you will find on offer as well as the special atmosphere. What better way to introduce the food than to include a couple of the mouth watering recipes you can enjoy there.
Spinach and Ricota Ravioloni

Ingredients:
• Fresh pasta, spinach and ricotta ravioloni
• 150 gr. Pumpkin
• Thyme
• 70 ml sherry wine
• 50 gr. fresh onions
• Butter
• 1 table spoon of sweet Thai chilli
• 200 ml cream
• 250 gr spinach
• 1 Clove of garlic

For the sauce
Fry the onion in Butter, put some thyme and the pumpkin in the pan and add the sherry wine, leave it until the alcohol will evaporate, then add a tablespoon of sweet Thai chilli and the cream and boil it for two minutes.
Separately cook the spinach with garlic and meanwhile cook the ravioloni in boiling water about three minutes.
To decorate the dish put on the bottom of the plate the Spinach, then the raviolonis and then add the sauce

We would like to thank Shanti-Som and the Ashiana Foundation Charity which was founded 5 years ago by owner of Shanti-Som – Kezia Jacobsen, for organising a special relax and pamper day at the hotel for a friend of ours who is fighting a serious illness. One of the aims of Ashiana is the ‘community helping the community’ by becoming an Ashiana Angel……….and in this vein Shanti-Som invites people to nominate someone who has an illness, is a carer, or just going through a difficult time. They will then every month choose one person for a half day spa package with a healthy lunch in their beautiful Restaurant. The Ashiana Foundation is also trying to organise Xmas Hampers for those in need and invite people to donate some ‘goodies’ for helping to make someone’s Xmas a little brighter. Emma Collins, who is fighting cancer, told La Chispa: “We had fantastic food and a wonderful morning at the spa. It really helped lift my spirits and it is inspiring how people have been helping me recently.” Willow Castle, who joined Emma for the meal commented “Emma was treated to a wonderful massage which left her feeling relaxed and refreshed, followed by an absolutely delicious meal made from only the healthiest ingredients which was obviously great for Emma.”
